my first attempt of making cheesecake is a success... even though it wasn’t that perfect, but i believe the next time would be better... practice make perfect... so im going to share the recipe with all of you who are reading this now...
No-bake cheesecake (you do not need a microwave oven for this cheesecake)
The ingredients are:
180g digestive biscuit (or any other biscuit that you prefer)
100g unsalted butter, melted
250g (1 packet) cream cheese, softened (i would suggest PHILADELPHIA cream cheese which is available at supermarket)
100g whipped cream (can be replaced with chilled evaporated milk)
1 can condensed milk
1 lemon (juice)
1/2 teaspoon vanilla essence
2 tablespoon gelatine powder
How to do it:
1. Crush the digestive biscuit finely.
2. Put the crushed biscuit in a bowl and add in the 100g melted butter. Mix well.
3. Then press the mixture onto pie plate/pan to form the base.
4. Put the pie plate/pan in the fridge to chill about 1-2 hour, depending on the thickness.
Meanwhile;
5. In a bowl, beat cream cheese until smooth and creamy.
6. Gradually add in 1 can of condensed milk in the bowl (if you prefer the mixture not to be too sweet, i would suggest add in the amount of condensed milk as you prefer)
7. After the evaporated milk is cool enough, pour into another bowl and whip.
8. Add in the whipped evaporated milk, lemon juice and vanilla essence to the cream cheese mixture, mix well and continue beat until smooth.
9. Add 2 tablespoon of gelatine powder to 1/4 cup of hot water. Mix until the gelatine dissolves. Add into the cream cheese mixture, mix well.
10. Now spoon over the mixture evenly into the chilled base. Refrigerate overnight.
11. You can top or decorate it with fresh fruit or grated chocolate when you're ready to serve.
**Note: Evaporated milk must be chilled in the freezer until ice has formed around the edges of the milk. For better result of whipped evaporated milk, chill also the bowl and beater in fridge.
so, that's it... easy...? i think it's easy enough for first timer...
